I have been working in the field of butchery for more than 30 years and am experienced in all facets of the craft. I began my career as a young boy working in a local butcher shop and there my passion for beef was birthed. I went on to work in a meat factory where my unique skills were identified and I quickly progressed in my career becoming manager of a local artisan butchery.
I am passionate about beef production including nurturing, feeding regimes and dry ageing processes to maximise health benefits, marbelling and ultimately the taste. I now own Lisdergan Butchery; a traditional retail outlet and also wholesale butcher supplying artisan meats to high-end restaurants in Ireland and the UK.
I was privileged to be selected as Vice Captain of Team Ireland in the World Butcher Challenge 2018 and honoured when the Irish team were crowned World Champions.
